One flight number is one segment, two flight numbers are two segments, and so on. For example, if you were flying London to Sydney and took BA9, you would only count one segment because it is only one flight number, no matter that it connects through Bangkok. If you took CX254 and CX111 through Hong Kong, it would be two segments because it's two flight numbers.
