i am really intrigued, though i don't have the slightest clue.
a good starting point might be the carpentry tools museum of the venerable construction firm Takenaka. http://dougukan.jp/
i suspect the few remaining shops to be in the neighborhood of Kiba (literally, lumber yards), which you can access to subway.
