Wouldn't you just drive the route you want, and once you diverge off the recommended route it recalculates? That's what I have done when I didn't want to follow nuvi's directions at a certain point. Although it does seem to sound more and more annoyed after the first 1 or 2 "Recalculating"s.
That's what I do also for when I need the GPS for street-wise directions but I would rather choose my own highways.
You do also have options (at least in my 660) to set it to either shortest time or shortest distance and some different things to avoid like traffic or tolls.
