I have always seen people change into pj's after boarding but before takeoff, and some wait until after takeoff. That does not mean that you could not change in the Clubhouse before departure, though.
And, if you are referring to the VS pajamas, I am not sure they are available in the Clubhouse; normally, they are distributed onboard the aircraft before departure.
