With UA I have been known to check in 60 mins before departure. I expect there are people who have checked in later than that. I prefer to allow two hours, because the immigration lines can be quite long and it's nice to have time to check email and have a shower before boarding.
To be honest, I'm not entirely sure about Air Canada's final check-in rule. I only know that I reached NRT two hours before departure and I estimate that I heard their "final check-in" announcement 20 minutes later. It surprised me.
I'd check with your airline if you're planning a last minute check-in.
