I agree that this can make things difficult. From the pax point-of-view, though, catering is the responsibility of the airline (AA, in this case). Full stop. Third party arrangements are for AA to handle, and the pax should not have to worry about that. If they do not get what they are supposed to, particularly after having paid for the upgrade, they should, IMO, receive at least a partial reimbursement for said payment. I know the AA argument that the upgrade is for the seat, and not the service...but, if a certain level of service is advertised and not delivered, some remuneration is due.
As an EXP who gets "free" upgrades, I'd not sweat it. If I'd paid for the upgrade, though, I'd be writing as well.
