Turn in the car the night before (can even do this very late at night, as I recall), and stay at the Intercity Hotel Frankfurt Airport, at Cargo City Sud. Use their shuttle to get to/from airport.

If you take a taxi to city center for dinner, that will run 20-25E each way.
