I have seen two different approaches ...
a) the obvious approach: they flit around and take orders from the GS and 1Ks first and then go back for everyone else, or
b) the subtle (and maybe lazy) approach: they do FEBO (although usually it's front to back regardless of odd/even), and ask row by row. But if you're GS or 1K, they ask you "what would you like for your entree(sic)" ... if you're not, they ask you for your "first and second choice" ...
On the other hand, you're talking about UA catering, so even the first choice is often inedible.
