Skyteam IAH options to SCL involve DL via ATL (with very good reviews from my parents) and CM via PTY (I personally took the PTY route).
I forgot about Copa. The flights on Copa are EUA-able, so that may be more compelling than sitting in Y on DL. Of course, if you can buy J, DL is a much better seat than the CM option.
