Try Old Nevada/Bonnie Springs http://www.bonniesprings.com/ Eight is the perfect age for the gunfights and horseback riding there.
I have to second Bonnie Springs, They put on a pretty good, not overly violent, kid participation Wild West Show. Also you could swing by Red Rocks on the way over there. They have a 1 mile kids exploration walk that is rather nice and longer, more strenous hikes as well.

Ditto on the temperature swings out there. We were in LAS the winter of '03 or '04 and it snowed

Also Circus Circus is a pit as a casino if compared to places like Mandalay Bay and Luxor. But as an amusement park and a place to keep kids entertained for a day it is not as all bad.

FYI. The casino allows kids on the floor to watch the circus acts, but they may not go onto the carpeted areas where the slots and tables are.
