Paris is.. by far.. my favourite city in Europe... and it seems to be well suited for your tastes ("museum and restaurant hoping and shopping (her mostly). Also enjoy theatre/opera").

I think that Paris, Amsterdam and Vienna will be cold around that time of the year.. probably not so different from the cold you had in London last year..

Rome and Barcelona are also very good choices.. and warmer..
