Mandalay Bay does maintain a small year-round outdoor heated pool, heated to 80 degrees fahrenheit, (26 C.) though it's not the big wave pool that's so famous. That pool re-opens in April, typically, after being closed for the winter.
Be aware that daytime temperatures in Las Vegas can be cold in January, sometimes less than 50 degrees fahrenheit. (10 C.)
