One note: if you order the omelet for breakfast, they do cook that to order on board (they gave up trying to find a way to make reheated eggs taste good). I didn't wake up early enough to try it, though.
Actually I've had omelets in Acela First Class that are just reheated and taste perfectly fine. They went back to one choice of fresh cooked omelet in large part because enough cooks protested about not cooking and because they (the cooks) felt sure that they could meet the demmand without hurting overall service in the dining car.
So thanks to a majority of Amtrak cooks, we still have fresh cooked omelets even if nothing else is fresh cooked on board.
