(i) get a Nokia E61 and run fring on it -- allows you to connect to Skype, and has a www-browser to get around those hotel-www-sites. Wifi & 3G both

(ii) a travel access point (to hook up to the Ethernet port in the hotelroom) doing NAT, then use your laptop or pda or phone with wifi to get by the www login form, and you're good to go.

I do both, and they're both working quite well. For the second option, I use a cheap Logitech WiFi Skype phone.
