CO has been very tight-lipped about routes or new BF products on the 787. Only thing we know is that it's most likely to have 9-abreast seating, not 8, in coach.

Note that in Northwest's recent application for its China routes, they explicit say that if they win DTW-PVG in 2007, they'll start with a 744 but shift to a 788 when they arrive.
CO did not say anything at all about the 787 in its EWR-PVG application.
