Airlines probably assume C / F pax are somewhat more discriminating in what their kids watch. If you look in the in-flight movie guide, they probably say whether a movie has "adult themes", etc.
I think it's probably also related to the fact that you can change the channel, whereas when video is on the main screen, you can't. IIRC, Air Canada's new in-seat IFE doesn't have censored movies either for the entire plane.
