I think it would be a GREAT idea if you could select your meal in advance.
An Airline at Gatwick called AIRWORLD did this and it was great. Until they were merged with TCX.... the rest is history.
In my exp, menus are region specific; I used to fly AUH-LHR-IAD and the menus were VERY different. I.e. No pork to from/ AUH (beef sausage for breakfast(!)) and a main course dish from the region.
