I think your problem is because of the regional configuration...7 hours is by no means comfortable in this set-up. However, crew attitude is also a factor - if you get a set of grumpy and tired crew you get bad service. OTOH if you get a set of bubbly and well-rested crew they will obviously go for better service.

And what do you mean by "the beginning of the end"?
