I had originally booked EDI-LHR-BKK-FRA-EDI as a return trip with awards, and also SIN-BKK one way with awards. I successfully cancelled these to get one way tickets from EDI-LHR-BKK and SIN-BKK-FRA-EDI with a stopover in BKK in the second flight. I changed the date of the SIN-BKK leg, but the other flights were on the same planes in the same class and I reserved the same seats. I did pay two cancellation fees, but it was worth it.

I'm not promising it would work in the LAS-LAX-LHR case, but it worked for me.
