Southwest could easily fly to Hawaii or Alaska with their current aircraft. The range of a 737-700 is 3700 miles, and about 3850 with winglets. Manchester to Las Vegas, a flight Southwest currently flies, is 2349 miles. Here are some possible runs for Southwest, taken from the airport distance calculator at landings.com:

Oakland - Honolulu: 2405mi
Los Angeles - Honolulu: 2551mi
Los Angeles - Anchorage: 2342mi
Chicago - Anchorage: 2852mi
(MDW runway might not be long enough to support this run but it's fun to think about!)
Manchester - Dublin, Ireland: 2976mi
(even more fun to think about)

I contend that equipment is not a reason that Southwest doesn't fly to Hawaii and Alaska.
