Also, as a Star Alliance Gold member, I should have access to the TG lounges in CNX and HKT right? So maybe flying C from HKG to CNX and then coach for the CNX-HKT and HKT-BKK flights makes sense?

Well, if I were to buy in Hong Kong, I would worry about availability. Buying from a TA with flights not originating from the country where the TA is based is expensive from my experience as it gives you system fare. TG reservations office can give good fares. Don't bother calling them, e-mail them. You could try those online website like expedia? Yes, as a *G you have lounge access.
