It depends on the fare rules. For domestic fares it is normally the case that the value can be applied to another ticket, but many international fares do not have that. For these, if you cancel you have anywhere from fully refundable to completely losing it

If it is a purely voluntary cancellation, it would not be normally covered by insurance. I am not surprised that the insurance company will not cover this tbh
