Op-up's are more likely to happen in the QP or at the gate than at check-in (not to say it won't happen there).
I took QF29 last easter and it was sold out in Economy; I had requested upgrades for myself and mrs serfty; these came through ^.
While in the lounge at least 5 or 6 PAX were summoned to the service desk for different coloured BPs.
