Just to give the opposite perspective (in terms of flying on Jewish holidays), I had a trip planned that left PHX in the morning, connected in SFO and NGO to Taipei. It left on Wed. morning, arrived Thursday night. I missed my flight out of Phoenix due to partially avoidable circumstances, and could not make it in time to my SFO connection. The ticketer was happy to put me on tomorrow's flight, except for one problem. It would get me in to Taipei on shabbat.
I had to rebook for Sunday morning, getting in Monday night, at great expense, turning my leisurely five-day trip into a somewhat frantic two-day trip. Luckily, I took the trip mainly for the miles, and did not have great expectations of what I wanted to see.
My point? Travelling transpac for Orthodox Jews is risky business, and are some of the hardest trips to schedule.
