It is unfortunate that you experienced what is obviously not typical Southwest service, although I will agree that there are some flight attendants that make you wonder how they made it through training. When you report this to Southwest, I think you will be pleased at their responsiveness.
On the "snack" issue, I believe they are slightly misleading in their wording. From my understanding (someone please correct me if I am wrong)the snack is distributed only when the actual flying time is 2 hours or greater. This makes it difficult to tell if you get a snack or not. For example, I often take the 7AM flight from BWI-MDW, which is exactly 2 hours gate-gate according to the schedule. However, later fligts can be 1h50m gate-gate, depending on airport congestion. Therefore, I believe that they rely on actual scheduled flying time for the route. That being said, I always stuff my bag with snacks and make a quick stop for a quick dinner to bring on the plane. This often brings stares from hungry passengers and flight attendants.
On the timliness issue, I have also noticed a decline in on time performance.
