Ultimately, the issue can be boiled down to consistency of service. And AA is the most inconsistent of any airline I fly when it comes to setting expectations for the F cabin. Some FA's offer pre-boarding beverage service, most don't. Some don't take orders FEBO, most do. Some follow the book when reading the onboard announcements, some don't. You get the picture.
I hate boiled issues. They are normally overdone, and served limp and soggy. Done properly, hot and crisp, they are a treat for the taste buds. Perhaps it has to do with the lower boiling temperature of water at altitude.
