If you book a one night hotel stay, typically, your free breakfast amenity is the following morning. Also, typically you cannot check in until sometime in the afternoon. So this really is not as issue as breakfast is long over by check in time. If you do arrange an early check in, simply ask the hotel if you can use your voucher the morning early. You will not get vouchers for both days though and if you want to try and move it to the first day, you will have to talk to the hotel. PTS will not be able to effect the validity of their amenity package.
On a few occasions, I've checked in very early in the morning (flying to BKK or HKG overnight, for instance) on an FHR rate and the hotel front desk has comped breakfast the morning of arrival (without asking, btw). Don't count on it, but you can luck out. If the hotel goes strictly by the book, you are out of luck.
