Sure - Ultimate Ears ships their earphones (at least the Super.fi 5Pro) with a little attenuator you plug in between the phones and the airplane jack. It also helps to reduce that background "whine" you get in a lot of planes.

If you've got high end Shures (e5, e5c, e500, se530), they come with an add-on volume control - set it low and then turn up the seat's volume control to compensate.

If you don't have either of those, just buy an in-line volume control from RadioShack for $6. Again, set it low, then turn up the seat volume. Basically, in all cases, you're just adding a small (variable if you have a dial) resistor to the signal path.
