There has been an issue with the GE-powered 777 which requires the engine to be operated for takeoff at maximum thrust rather than calculating a lesser amount (which is more economical). At light weights it leads to some spectacular climbouts. Pilots control how they climb away from airports by calculating a speed, not by angle of climb, so to maintain the calculated speed with the engines going flat out you pull back on the stick and increase your angle of climb until it balances to the required figure. Which is how 757s used to be handled as well before the accountants came to the fore.
Don't know about the spotterspeak, but a pilot will say they are "firewalling it".
That sounds like what we experienced - it was like going into orbit! (Plane was on hop between TAB and Antigua, very few pax on board, and they refuel in Antigua so not much fuel either... )
