I think you'll be safe...
Venetian is apparently ready 23 July, when the first guests will be the ManUtd football team. The period after will probably be a soft launch, so the resort should have a few months run in by that time (I think they will have VIP guest before then). Also, there have been a trade shows scheduled before then.
I think that's why the booking starts in September - they're playing safe.
