If quality of food is paramount, make it yourself. Otherwise,
choose based on what kind of atmosphere you are seeking.
I recommend Lau Pa Sat at 1 in the morning, surrounded by
drunken FlyerTalkers. Uncle's recommendation isn't bad, either.
