The E gates are only a short walk from the point where the D gates intersect with the hallway that connects to the C gates. I'd say 10 minutes would be more than sufficient to get from even the end of the C gates to the E gates walking at a slow pace. In my experience, there are many 30-min connections in SLC, and unless the incoming flight has a delay of over a few minutes, there isn't really a problem. SLC is a small, easy to use airport.
