Hi Jon. Booking the center 3 seats on the 767 (or 777) is fine, as long as the car seat goes in the middle seat. This is not to block egress of passengers to the exits during an emergency. Same would go for the window seat, not to block pax movement.

As for your second question (seating on the right side only), I'd never heard that one before.
