At least for the transatlantic, you can get to Europe with surprisingly limited overwater flying making a number of stops - if you trace it up through New England, Cananda, Greenland, Iceland, Ireland, UK, the longest over water stretch is probably 750 miles.
I believe Keflavic, Iceland is a typical refueling stop for smaller private jets.
