Whilst Central, Causeway Bay etc are nice, they're not representative of the "real" (IMO) Hong Kong where the majority of the population live. For that, you might want to walk around parts of Kowloon which has a more Chinese atmosphere compared to the touristy parts of Hong Kong Island (given that you won't have enough time to visit the New Territories).
