It still isn't clear how many nights you have but I will assume 7. I'm assuming you will do a coastal drive both directions. Many people take I5 one direction as it is much much faster but very very boring.

I would also skip SAN and instead spend the extra day going north of SF into beautiful country that you wouldn't easily get to otherwise.

Here is a proposal. You will spend a good chunk of each day driving with this plan.

Day three Wine Country
Day four Mendocino
Day five Half Moon Bay
Day six Big Sur
Day seven Santa Barbara
