This may be an issue. There have been a lot of studies that a plain seat belt is better than a car seat. However, i think a child needs to be at least 6 months for this to matter.

I still think this is doable if you are nice to the FAs, are honest upfront, and make sure they know an option could have been 2 business class seats / no coach seat. After all you are being more safe than most 2<year old parents.

Therefore, the answer is that you need to officially assign the baby to a seat next to one of you. And if you actually install the car seat in that seat, you're going to have issues with uninstalling it and moving the other parent into that seat.
