It is "Ridiculous" to expect that CO or any other airline is responsible to meet every "special" diet. There is a standard throughout civilized society that the vast majority of people adhere to and on occasions it might require adjusting; but to expect CO to cater to all those dietary needs on every snack/meal flight is unreasonable.
Take personal responsibility for you own well being and plan ahead or be flexible to circumstances (storms, mechanical delays); most of the "strict" kosher folks often pack enough food in their carry-on luggage to feed everyone on the plane; why, because they know to be prepared.
