Actually you can have one stop-over in each direction. When I was booking my most recent reward trip, the agent was quite happy to book a stop over in each direction. I ended up with more than two one-ways because I wanted to cross zones west from Hawaii, but had it been a simple return he was happy to route me back via a different city with a stopover there.

True, for a return - although you can actually mix classes on a multi-leg trip and you will be charged the booking class for the
longest sector. This has worked for me in one direction (first class flight SFO-HNL charged business miles because FRA-SFO is business) and against me in another (business class flight HKG-BKK charged first because BKK-FRA is in first). So it averages out.
