To clarify, I just meant that those are the top two choices IMO. I needed a larger amount of cash on me, so I exchanged at the airport for the 40rmb/$5 flat fee, vs. only being able to withdraw 2000/2500rmb as is the case at many ATMs. Plus, in my case BofA charges a fee for foreign transactions that can be a little on the high side at times.

So if a person wants to pick up 5k/6k/7k/8k RMB, it's easier to just exchange at the airport window. During two of my last three trips I have not stayed at a hotel (and my last hotel is not western/overseas tourist oriented), so that's why I didn't include that in my list.
