I haven't flown Ryanair out of DUB, but I am aware of their 40 minute check-in cutoff and have heard that the DUB check-in lines can run serpentine. I generally try to carry on; is 2:15 cutting it too close? Thanks!
I would say no.
I've survived a ten minute connection at DUB before, although in different circumstances, I had an onward boarding pass in my hand, but still had to clear immigration. I wouldn't recommend that though, but providing Delta doesn't delay you, you should be fine ^
