This is not always like that. On my August JFK-LHR flight they had a choice of Pipers or LP and Pipers was pre-departure drink. Being not a big fan of Pipers I have asked for a LP and received it. There was not a problem of getting LP refills throughout the flight.
On my December SFO-LHR they run out of LP and their red wines were very cold so for the best part of the flight I was getting champagne from F in F champagne glasses (can't say which one but it tasted better than LP NV).
