Airline Catering & Chefs

Usually most carriers in biz and first, especially on international flights, throw in a cozy, "feel good" paragraph on the menu about the chefs who designed the meals, best ingredient usage, complementary wine selections, blah blah blah.

At the end of the day, in the U.S., Gate Gourmet seems to cater almost every carrier. Therefore, I assume the food comes from their kitchens.

That said, does Gate Gourmet have a huge menu that the carriers can choose from? Or does the chef teach the Gate Gourmet slaves how to cook the meals that have been designed for each carrier? I've always wondered how this works.
