A good place to see and stay is the Hunter Valley Gardens. Enjoy the trip.
I would definitely second Tyrrells - the cellar master there is originally from Scotland and is full of facts and stories. Last time we visited they were filming for Japanese TV so we had a private tasting in the house

Also try Peacock Hill - great host and fantastic wine that isn't that well known
