Depends really on what you are into - different horses for different courses (so to speak).
I drink at Manacle and at the Taxi Club, and I used to drink at the Oxford Hotel (although it has been closed for renovations, haven't been to Sydney since it re-opened).
Judging by your nick, I am presuming you are after a younger crowd - I would go for the Columbian or possibly Stonewall, both located in Oxford St close to Taylor Square.
IF your tastes are a little more *varied* let us know and someone will come back.
