I personally don't have an issue with plastic knives. They are actually quite durable yet flexible (nice for spreading the whipped butter) and lightweight. In addition, they actually can cut food, just not a human throat I guess. Besides, there are probably about another half-dozen other things in and around that tray that someone could use to kill someone.
I agree the cutting motion on a plastic knife has always been superior to the blunt metal knives. Regarding other dangerous items on the tray, the ciabiatta rolls thrown well could certainly be hard enough to puncture the fuselage of an aircraft.
