TI standard rooms are quite small.

Westin Casaurina (don't mind the walk to the strip) - Standard room sizes, so I've heard.

Southpoint hotel & Spa - New and larger rooms, but no fridge in rooms that I'm aware of.

Holiday Inn Express (South) - Very highly rated on TripAdvisor, but unknown if fridge in room.

Platinumn - Condos, so here's your "large" criteria. Full kitchens and dining rooms. Close to Strip. Personally, this may be your best choice.

Meridian Resort (Flamingo Road) - Unknown.

Luxor (players suite) - Well, if they'll take care of you, this sounds sweet. Don't know about size and fridge availability, however.

Also consider the Renaissance near the convention center - fridges in all rooms; nice sized; flat panel TVs; kind of a hip vibe/feel; Marriott points if it's important to you. Savvy Traveler rate may be available for your dates. Go to their specific website and look at "Specials and Packages."
