Three Meal Service Questions

Hi All,
After lurking for over a year now, an issue has arisen that I cannot find an answer to.

I am traveling to BNA next week in United First and creatively routed my travel via PDX, DEN, and ORD to maximize mileage accrual.

This is how the outbound itinerary looks:

UA 404 LAX-PDX (752, Breakfast)
UA 346 PDX-DEN (735 [Shuttle], Breakfast)
UA 248 DEN-ORD (320, Snack)
UA 7151 ORD-BNA (CRJ [operated by Mesa] No Meal)

My question is in regards to meal service options. In all my travels with United, I have not had the “pleasure” of sampling one of the breakfast sandwiches and look forward to trying one from LAX-PDX.

But, what course of action would you recommend for the next two meal flights?
1. By ordering a special meal can I circumvent the Shuttle fruit/cheese boxed breakfast from PDX-DEN?
2. By ordering a low-fat meal, can I get something more substantial than fruit/cheese on the quick DEN-ORD flight?

My routing on the return trip will take me directly from ORD to LAX, putting me on UA 943 (757, Dinner). It has been hit or miss with me on westbound Chicago flights whether or not a full meal is served in F. On my last flight at the same time in Sept 06, I was offered beef short ribs or ravioli with salad. On a previous dinner flight in April 06, I was offered an open-faced sandwich or lasagna with no salad. Is there any consistency?
