I would pick the Westin over the Sheraton. The Westin just went through a multi-million $$$ renovation/re-branding and is very nice (for an airport property).

Hilton DFW Lakes is nice though too, but not sure how long your layover is to benefit from a pool/Grapevine Mills. The rooftop pool at the Westin isn't great by any means.
