My question is whether a 2 hr layover in Heathrow connecting is long enough? Since I am coming from an EU country, so I can avoid the wait at customs. As I would be changing airlines, however, I would need to gather my checked luggage and check-in for my AA flight to the US. Is this too risky a flight plan? I have few other options.

A similar flight plan is available taking Air France from BCN --> CDG with same timeframe. Any advice on which airport is easier to navigate for connecting flights?
I don't see why this would not work.

There is no reason why you could not check your luggage from BCN to JFK, saving time in LHR

The EU piece above is irrelevent. You will be chaning terminals, so either you will have to clear customs/immigration and walk to T-3 or take the Flight Connection bus. In either case, you will have to reclear security
